Ingredients
1tbspred pepper jelly
1tspwhite wine vinegar
2tbspolive oil
1tsp dijon mustard
pinchsalt
1slicebaconcooked and crumbled
2tbspextra old cheddar cheesefinely cubbed
3cupsbaby spinachstemmed and torn
Instructions
In a glass jar or bowl, whisk the red pepper jelly, vinegar, olive oil, mustard and salt. Heat in the microwave for 15-20 seconds. Whisk again and allow to cool.
Remove the stems from the baby spinach, tear and put into a salad bowl. Spoon over the dressing a litlle at a time and toss. Being careful not to over dress.
Sprinke with bacon bits and grated cheddar to finish.
