Spinach Salad with Red Pepper Dressing

Ingredients
  

  • 1 tbsp red pepper jelly
  • 1 tsp white wine vinegar
  • 2 tbsp olive oil
  • 1 tsp dijon mustard
  • pinch salt
  • 1 slice bacon cooked and crumbled
  • 2 tbsp extra old cheddar cheese finely cubbed
  • 3 cups baby spinach stemmed and torn

Instructions
 

  • In a glass jar or bowl, whisk the red pepper jelly, vinegar, olive oil, mustard and salt. Heat in the microwave for 15-20 seconds. Whisk again and allow to cool.
  • Remove the stems from the baby spinach, tear and put into a salad bowl. Spoon over the dressing a litlle at a time and toss. Being careful not to over dress.
  • Sprinke with bacon bits and grated cheddar to finish.
