Basic Brine
This is a basic brine. If you’re going to be grilling pork or chicken and just want to add moisture and tenderize the cut of meat this is a great brine. Simple to make, the end result is a tender, and moist piece of grilled perfection. It is also very easy to adapt to larger or smaller quantities.
Ingredients
- 6 cups water
- ⅓ cup kosher salt
- ¼ cup sugar
- 1 tsp peppercorns
- 2 cloves garlic crushed
- pinch chilli flakes
- 2 bayleaf
- 1 tsp thyme
Instructions
- In a medium saucepan, bring water to a boil, dissolve salt and sugar
- Add peppercorns, garlic, chilli flakes and bayleaf and thyme. Remove from heat and allow to cool completely.
- Cover meat with cooled brine, either in a pot or ziplock bag. Refrigerate 4-8 hours,
- Rinse meat well prior to cooking.
