Instructions
In a medium saucepan, bring water to a boil, dissolve salt and sugar
Add peppercorns, garlic, chilli flakes and bayleaf and thyme. Remove from heat and allow to cool completely.
Cover meat with cooled brine, either in a pot or ziplock bag. Refrigerate 4-8 hours,
