There is nothing better than a bowl of steaming hot soup on a cool fall day. Load that soup with potato, bacon and cheese and you will want it any day! It makes a delicious and hearty meal or serve it in smaller portions as a side. it is sure to please. For this recipe we use a low sodium chicken broth and 1% milk. Substitute the milk with a 2% OR 3.75% if desired.
This soup pairs very well with cheese and bacon crostini. It may not be guilt free, but sometimes it’s just worth it!
Hearty Potato Soup
Hot, satisfying and delicious. This soup checks all of those boxes.
Ingredients
- 1 tbsp vegetable oil
- 2 cloves garlic minced
- ¾ cup onion chopped
- 2 medium potatoes peeled and chopped
- 1 ¾ cups chicken broth
- ¼ cup milk
- 3 slices bacon cooked and crumbled
- 1 cup old cheddar grated
- 3 tbsp green onions chopped
- salt and pepper to taste
Instructions
- Add 1 tbsp vegetable oil to a medium saucepan and sauté chopped onions until soft. Approx. 2-3 minutes. Add garlic and cook for an additional minute.
- Add chicken broth, milk a pinch of salt and pepper to the pot. Add chopped potatoes and bring to a boil, cook until potatoes are soft.
- While the potatoes are boiling, cook and crumble bacon and grate cheese.
- Purée the potatoes with the milk and chicken broth they were cooked in. If necessary, thin with additional chicken broth. Transfer to a clean pot. Reheat soup, add green onions, cheese and bacon. (Reserving some for garnish if desired.)
- Serve and enjoy.
