Ingredients
1tbspvegetable oil
2clovesgarlicminced
¾cuponionchopped
2medium potatoespeeled and chopped
1 ¾cupschicken broth
¼cupmilk
3slices baconcooked and crumbled
1cupold cheddargrated
3tbspgreen onionschopped
salt and pepper to taste
Instructions
Add 1 tbsp vegetable oil to a medium saucepan and sauté chopped onions until soft. Approx. 2-3 minutes. Add garlic and cook for an additional minute.
Add chicken broth, milk a pinch of salt and pepper to the pot. Add chopped potatoes and bring to a boil, cook until potatoes are soft.
While the potatoes are boiling, cook and crumble bacon and grate cheese.
Purée the potatoes with the milk and chicken broth they were cooked in. If necessary, thin with additional chicken broth. Transfer to a clean pot. Reheat soup, add green onions, cheese and bacon. (Reserving some for garnish if desired.)
