Hearty Potato Soup

Hot, satisfying and delicious. This soup checks all of those boxes.

Ingredients

  • 1 tbsp vegetable oil
  • 2 cloves garlic minced
  • ¾ cup onion chopped
  • 2 medium potatoes peeled and chopped
  • 1 ¾ cups chicken broth
  • ¼ cup milk
  • 3 slices bacon cooked and crumbled
  • 1 cup old cheddar grated
  • 3 tbsp green onions chopped
  • salt and pepper to taste

Instructions

  • Add 1 tbsp vegetable oil to a medium saucepan and sauté chopped onions until soft. Approx. 2-3 minutes. Add garlic and cook for an additional minute.
  • Add chicken broth, milk a pinch of salt and pepper to the pot. Add chopped potatoes and bring to a boil, cook until potatoes are soft.
  • While the potatoes are boiling, cook and crumble bacon and grate cheese.
  • Purée the potatoes with the milk and chicken broth they were cooked in. If necessary, thin with additional chicken broth. Transfer to a clean pot. Reheat soup, add green onions, cheese and bacon. (Reserving some for garnish if desired.)  
  • Serve and enjoy.
