It was always a treat when Mom would bring out the vegetable pizza bites. Loaded with vegetables and cheese, she would bring them out at lunchtime. Just like a lot of her other creations it seemed like there was a never ending supply.
The recipe for pizza bites is around forty years old, so the options today are much greater. Substitute ranch dressing mix for a herb cream cheese and a “healthier” lesser amount of mayonnaise. We look forward to updating this recipe, but the original will always be dear to our hearts.
Moms Vegetable Pizza Bites
Served cold, these pizza bites are a tasty addition to any dinner party, get together, lunch or after-school snack.
Ingredients
- 2 cans Pillsbury Crescent Rolls or equip.
- 1 package ranch dressing mix
- ¾ cup mayonnaise
- 2 250 g cream cheese
- ½ cup red pepper finely chopped
- ½ cup green pepper finely chopped
- ½ cup broccoli finely chopped
- ½ cup mushrooms finely chopped
- ½ cup carrots shredded
- ¾ cup old cheddar
Instructions
- On a large cookie sheet, lay out the crescent rolls to cover pan. Pinch the seams together. Bake as per directions on package, or 15 mins at 350℉.Remove from heat and allow to cool
- Mix ranch dressing, cream cheese and mayo until smooth. Spread the mixture evenly over the cooled crust.
- Spread the vegetables over the cream cheese mixture and lightly press into to the mixture.Top with grated cheddar.
- Cover with wax paper and chill for 3 hours. Cut into 2 inch squares.
