Cheese and Bacon Crostini

Its really just a bacon & cheese spread

We call it cheese and bacon crostini, Mom always called it something else. I would ask “what’s for lunch today?” Her response “cheese crap on toast.” Of course she was just being funny in her own way! One of the many things I loved about her. Simply put, it’s a cheese spread made with bacon, green onion, mayo and cheese. That’s all there is to it. When we’d visit for lunch it seemed like there was an endless supply of them. She was heavy handed with the mayonnaise making them a bit greasy. But we still had no complaints.

They’re more than just an appetizer.

Bacon and cheese are a perfect match. Add some green onion and a little mayonnaise and now we’ve really got something. You need a vessel to eat it though. I guess if you wanted to eat it with a spoon you could but toast is a much better idea. Ideally spread it on a sliced baguette.

A hamburger topping?

That’s right, use it as a hamburger topping. Never mind the crostini’s. Whip up a batch of the mixture the next time you’re having hamburgers. Why not? It’s all there. Bacon, cheese, onion and mayo. Melt it on the burger like you would cheese. I guarantee, you won’t be disappointed. We have even gone as far as melting it on sliced meatloaf browned on the flat top.

Moms cheese with bacon crostini

A simple topping for crostini or toasted baguette
Prep Time 20 minutes
Course Appetizer
Cuisine American

Ingredients
  

  • 2 cups old cheddar grated
  • 4 green onions chopped
  • ¼ cup cooked bacon chopped
  • pinch pepper
  • 1 baguette
  • ¼-½ cup mayonnaise

Instructions
 

  • In a medium bowl, combine cheese, green onions, bacon and pepper. Mix well.
  • Combine the vegetable, cheese mixture with ¼ cup of mayonnaise. If the resulting mixture is too stiff, add some additional mayonnaise.
  • Cut the baguette into ½ inch slices. Spread the mixture liberally onto each slice and bake at 350℉ until bubbly and just starting to brown.
