If you like peanut butter, marshmallows and butterscotch, you’ve come to the right place. These peanut butter squares have a sweet airiness brought forward by the layer of small marshmallows. This recipe dates back about fifty years I’m sure they are still just as yummy now as they were back then. Vintage recipes are kept over the years for a reason and this one is definitely a keeper. Decadent and sweet, they melt in your mouth and will satisfy any cravings you might have for sugar.
Mom always had an endless tray of squares and treats hiding in the freezer downstairs. She would bring out “the tray” after every lunch, dinner or just as a snack when visiting. We visited very frequently and the funny thing is we’d never actually see her in the act of making them. Like magic they would appear, and like magic they would disappear. She used that red Christmas themed tray all year long. I think we still have it.
Peanut Butter Squares
Ingredients
- 12 oz butterscotch chips
- 1 cup peanut butter smooth
- ½ cup butter or margarine
- 2 cups small marshmallows
Instructions
- In a large saucepan, and stirring constantly, melt the butter, butterscotch chips and peanut butter. Stir until blended and smooth.
- Remove from heat and stir in marshmallows.
- Pour the mixture into a buttered 8 x 8 pan. Let cool and then refrigerate until set (2-3 hours)
- Loosen with a knife and carefully drop out of the pan onto a cutting board. Cut into small squares and store in an appropriate container. They can be frozen (My Mom did it all the time)
These peanut butter squares are softer but very similar to fudge. Cut them as small or as large as you like, we cut them in 2 inch squares. For our tastes, that is the perfect size.
