Macaroni Salad


Macaroni salad is probably one of the most popular take along sides. It’s simple and delicious. I’ve added the heat of sriracha and a hint of smoked cheese to take this macaroni to another level.

Sometimes you feel like macaroni salad and you just don’t need a pail of it. This is a smaller recipe for those occasions.


Macaroni Salad

A delicious and simple macaroni salad. This is a smaller recipe for those times you don't need a large quantity.

Ingredients
  

  • 1 cup elbow macaroni
  • 2 tsp white vinegar
  • 1 tbsp fresh chopped parsley
  • cup mayonnaise
  • 2 tbsp fresh chopped chives
  • 2 tsp dijon mustard
  • 1 tsp sriracha
  • salt & pepper (optional or to taste)
  • 1 tbsp chopped green olives
  • 2 tbsp smoked cheese (cheddar/gouda) finely chopped

Instructions
 

  • Boil the macaroni in salted water as directed on the package. When ready, drain and rinse under cold water. Transfer to a serving bowl.
  • Add the vinegar, parsley and stir.
  • Add ¾ of the mayonaisse and mix well.
  • Add olives and cheese, stir and refrigerate.
  • Taste before serving, add more mayonaisse if required.

Notes

Optional: You can replace the cheese with ½ can of drained flake tuna.
