Macaroni Salad
A delicious and simple macaroni salad. This is a smaller recipe for those times you don't need a large quantity.

cup
elbow macaroni

tsp
white vinegar

tbsp
fresh chopped parsley
⅓
cup
mayonnaise
2
tbsp
fresh chopped chives
2
tsp
dijon mustard
1
tsp
sriracha
salt & pepper (optional or to taste)
1
tbsp
chopped green olives
2
tbsp
smoked cheese (cheddar/gouda)
finely chopped
Instructions
Boil the macaroni in salted water as directed on the package. When ready, drain and rinse under cold water. Transfer to a serving bowl.
Add the vinegar, parsley and stir.
Add ¾ of the mayonaisse and mix well.
Add olives and cheese, stir and refrigerate.
Taste before serving, add more mayonaisse if required.
Notes
Optional: You can replace the cheese with ½ can of drained flake tuna.
