Macaroni salad is probably one of the most popular take along sides. It’s simple and delicious. I’ve added the heat of sriracha and a hint of smoked cheese to take this macaroni to another level.
Sometimes you feel like macaroni salad and you just don’t need a pail of it. This is a smaller recipe for those occasions.
Macaroni Salad
A delicious and simple macaroni salad. This is a smaller recipe for those times you don't need a large quantity.
Ingredients
- 1 cup elbow macaroni
- 2 tsp white vinegar
- 1 tbsp fresh chopped parsley
- ⅓ cup mayonnaise
- 2 tbsp fresh chopped chives
- 2 tsp dijon mustard
- 1 tsp sriracha
- salt & pepper (optional or to taste)
- 1 tbsp chopped green olives
- 2 tbsp smoked cheese (cheddar/gouda) finely chopped
Instructions
- Boil the macaroni in salted water as directed on the package. When ready, drain and rinse under cold water. Transfer to a serving bowl.
- Add the vinegar, parsley and stir.
- Add ¾ of the mayonaisse and mix well.
- Add olives and cheese, stir and refrigerate.
- Taste before serving, add more mayonaisse if required.
Notes
Optional: You can replace the cheese with ½ can of drained flake tuna.
