Chocolate Peanut Butter squares

These chocolate peanut butter squares are very similar to our peanut butter squares. There is a twist though. Oh yah, it’s chocolate. It’s a mere fifteen minutes to decadence. Actually, I shouldn’t actually say that, it’s fifteen minutes to make them. The sad part is, they have to cool for a couple of hours before you can eat them. So let me rephrase that. It’s two hours and fifteen minutes to decadence. Still though, you can’t beat the prep time.

This is actually a fast and fun recipe you can make with your kids. Just make sure you keep fingers out of the chocolate. It’s really hot! And don’t let them eat all the mini marshmallows, save some for yourself.

Like any recipe, preparation is key. Have your ingredients measured and at the ready. We use an 8 x 8 x 2 baking pan. Butter the pan sides and bottom. You will also want to cut a piece of parchment paper to fit the bottom of the pan. This is very important. Without the paper, you will have difficulty getting the completed chocolate square out of the pan after it has been set.

When the mixture has set, after about two hours in the fridge, you’ll want to get it out of the pan. The easiest way to do this, is to grasp the pan on both sides. Turn it upside down and whack it on your kitchen counter so the pan contacts flatly. Peel off the parchment paper and turn over. Cut into squares and you are ready to enjoy!

The chocolate peanut butter squares can also be frozen if there are any leftovers.

Ingredients
  

  • 1 300g pkg semi sweet chocolate chips
  • 1 cup smooth peanut butter
  • ½ cup butter
  • 2 cups small marshmallows
  • ½ cup chopped cashews optional

Instructions
 

  • Prepare an 8 x 8 x 2 baking pan by buttering the sides and bottom. Cut a piece of parchment paper and fit it to the bottom of the pan.
  • Melt the butter in a medium saucepan over medium heat.
  • Add the peanut butter and stir constantly until smooth.
  • Add the chocolate chips and stir until melted and smooth. Remove from heat. Quickly stir in the marshmallows.
  • Pour the mixture into your prepared baking pan and let cool. Refrigerate until set (about 1½ – 2 hrs)
  • Once set, remove from the pan by flipping it upside down and knocking it flat against the counter. Cut into squares and enjoy.

Notes

Servings are based on 2″ x 2″ squares.
If there are leftovers, these freeze really well.
