Cheese and Bacon Crostini

Cheese and Bacon Crostini

IT’S REALLY JUST A BACON AND CHEESE SPREAD

We call it cheese and bacon crostini, Mom always called it something else. I would ask “what’s for lunch today?” Her response “cheese crap on toast.” Of course she was just being funny in her own way! One of the many things I loved about her. Simply put, it’s a cheese spread made with bacon, green onion, mayo and cheese. That’s all there is to it. When we’d visit for lunch it seemed like there was an endless supply of them. She was heavy handed with the mayonnaise making them a bit greasy. But we still had no complaints.

WHAT YOU NEED TO MAKE CHEESE AND BACON CROSTINI

  • 2 cups of grated old cheddar cheese
  • 4 stalks of green onion, chopped finely
  • ¼ cup of chopped cooked bacon
  • pinch of pepper
  • 1 baguette
  • ¼ – ½ cup of mayonnaise

THEY’RE MORE THAN JUST AN APPETIZER.

Bacon and cheese are a perfect match. Add some green onion and a little mayonnaise and now we’ve really got something. You need a vessel to eat it though. I guess if you wanted to eat it with a spoon you could but toast is a much better idea. Ideally spread it on a sliced baguette. They’re great on the side of a bowl of soup.

A HAMBURGER TOPPING?

That’s right, use it as a hamburger topping. Never mind the crostini’s. Whip up a batch of the mixture the next time you’re having hamburgers. Why not? It’s all there. Bacon, cheese, onion and mayo. Melt it on the burger like you would cheese. I guarantee, you won’t be disappointed. We have even gone as far as melting it on sliced meatloaf browned on the flat top.

HOW ABOUT PIZZA?

We use this mixture to stuff pizza crust. I’ve gotta say, it makes a mighty fine pie. Here’s the link. Deluxe stuffed crust pizza.

SIMPLE TO PREPARE

The first thing you need to do is cook the bacon. While its sizzling away chop the green onions and grate the cheddar cheese. When the bacon is cooked, drain off any grease and chop it into little pieces. Put the bacon, cheese and pepper in a medium bowl and mix well. Stir in the mayonnaise until its well combined and that’s all there is to it. If you’re putting it on sliced baguette bake them at 350℉ until they are just starting to brown. Be careful though, that cheese is wickedly hot right out of the oven. If you’re putting the mixture on burgers, just top the burgers and put them back in the oven for a few minutes.
