Bacon cheddar loaf sliced and served warm with butter is a tasty appetizer. At first glance it can be rather innocuous, however the first bite tells another story. A soft, moist bread with the smoky flavours of bacon. Combine that with the salty tang of deli fresh olives and sharp creamy cheddar cheese. Three delicious flavours baked into one quick bread. It serves very well on its own, or try it with cheese or charcuterie tray.

Bacon Cheddar Loaf
A moist bread with olives, cheddar and bacon. Serve warm with butter. Delicious.
Ingredients
- 1½ cups flour
- 1½ tsp baking powder
- ½ tsp ground pepper
- 3 eggs lightly beaten
- ½ cup butter melted
- 1 tbsp butter hard (for loaf pan)
- ⅔ cup olives chopped
- 4 slices bacon sliced into lardons, fried
- 1 cup grated old cheddar substitute with gruyere, parmesan or sharp cheddar
- pinch salt
Instructions
- Preheat oven to 350℉
- Butter and flour an 8″ x 4″ loaf pan.
- Sift flour and baking powder and pepper into a mixing bowl. Make a well and add the eggs. Beat in the melted butter and form a batter.
- Add the remaining ingredients and stir well to distribute evenly. Spoon the mixture into the loaf pan and bake 45 mins. Check with a toothpick, it should come out clean when poked into the centre of the loaf.
- Allow to cool slightly, remove from pan and place on rack to cool.
