1½cupsflour
1½tspbaking powder
½tspground pepper
3eggslightly beaten
½ cup buttermelted
1tbsp butterhard (for loaf pan)
⅔cupoliveschopped
4slicesbaconsliced into lardons, fried
1cupgrated old cheddarsubstitute with gruyere, parmesan or sharp cheddar
pinch salt
Instructions
Preheat oven to 350℉
Butter and flour an 8" x 4" loaf pan.
Sift flour and baking powder and pepper into a mixing bowl. Make a well and add the eggs. Beat in the melted butter and form a batter.
Add the remaining ingredients and stir well to distribute evenly. Spoon the mixture into the loaf pan and bake 45 mins. Check with a toothpick, it should come out clean when poked into the centre of the loaf.
Allow to cool slightly, remove from pan and place on rack to cool.
