Beef Sliders With Ricotta Cheese

Small burgers with huge flavour.

Beef sliders with ricotta cheese have that smoky bark that makes for an absolutely delicious mini burger. Take your first bite, savoury beef juices run out being being absorbed by the buttery brioche buns. A hint of garlic rounded out by the subtle sweetness of ricotta cheese. Does that sound like something you want to sink your teeth into?

They’re not a classic burger

These are not run of the mill burgers. By adding beaten egg you might think these are a bit “meat loafish.” I’m not gonna lie, they kinda are. Have you ever had a slice of meat loaf browned on a flat top? It’s pretty good. True retro diner food. Delicious and simple. That being said, these burgers don’t have traditional meat loaf spices so it’s not really the same. They’re a pretty fine burger though.

Stretch a pound of ground

This is a fantastic way to stretch out a simple pound of ground beef. We generally use this recipe to make six patties. For a potluck we actually stretched out two pounds of ground beef to make 24 sliders on mini brioche buns. The meat to bun ratio was perfect and they were an absolute hit.

What you need to make beef sliders with ricotta cheese

  • 1 beaten egg
  • ½ tsp salt
  • ¼ freshly ground pepper
  • 1 clove of garlic (minced)
  • 1 tbsp fresh basil
  • ½ cup of ricotta cheese
  • ¼ cup of bread crumbs
  • l lb of lean ground beef
  • 1 package of brioche slider buns or equiv.

The mixture

Putting it all together is super simple. Just take a large bowl, whisk the egg and add the minced garlic, salt pepper and basil. Stir in the ricotta and bread crumbs until well combined. Next, add the ground beef and combine. If you’ve got a kitchen scale divide the mixture into about 6 equal portions. Shape them into patties and you’re all set.

Grill or fry

You can grill these on the bbq but a cast iron frying pan will add a really nice bark. Cast iron is our preference in this case.

Serve

Serve them on brioche buns or something similar with your favourite toppings.

Ingredients
  

  • 1 egg beaten
  • ½ tsp salt
  • ¼ tsp freshly ground pepper
  • 1 clove garlic minced
  • 1 tbsp fresh basil finely chopped
  • ½ cup ricotta cheese
  • ¼ cup bread crumbs
  • 1 lb lean ground beef
  • 1 pkg slider buns or small hamburger buns

Instructions
 

  • In a large bowl whisk egg, add salt, pepper, garlic and basil. mix well. Stir in ricotta and bread crumbs. Add the ground beef and gently fork through until well mixed.
  • Hand shape into patties that fit the buns you have. Using a kitchen scale, just divide the meat into equal portions.
  • Grill or fry the patties until cooked. (a cast iron skillet is ideal)
    Serve on buns or rolls of your choice.
    Using your favourite toppings, enjoy.

Notes

This recipe can also be used to make a delicious meat loaf. Simply shape into a greased loaf pan. Place the loaf pan on a baking sheet in the oven and bake at 350℉ for 50 minutes to 1 hour. Internal temperature should be 160℉. Let stand 10 minutes, slice and serve.
