Crostini toasts with Radicchio updated Jan 6, 2020
Carefully peel the cabbage-like leaves off a radicchio. Taste and you’ll find it on the bitter side of the scale. Mellow it out by cooking and that bitterness is balanced by a subtle sweetness. Adding red onion and grapes sautéed in balsamic vinegar, is a compliment that gives a bittersweet flavour.
If you want to change it up, top off with some crumbled gorgonzola. Just return to the oven and melt for a couple of minutes before serving.
Crostini with Radicchio and Grape Topping
These toasts are a sophisticated treat. Served cold or warm at a small gathering or even as a snack, they pair well with a cheese tray and a glass of wine.
Ingredients
- 1 large baguette sliced ½ to ¾ (12 pieces)
- 3 tbsp olive oil extra virgin
- 1 clove minced garlic minced
- 2 tbsp onion minced
- 2 tbsp parsley chopped (optional)
- pinch thyme dried
- pinch salt & pepper
- 1 tbsp balsamic vinegar
- 1½ cup radicchio chopped
- 1 cup seedless grapes chopped
Instructions
- Preheat oven to 350℉Toast baguette slices for 5 minutes.
- Combine olive oil with garlic, brush on baguette slices and toast an additional 5 minutes.
- Use remaining oil and garlic to sauté onions until tender, add the chopped radicchio, and grapes. Sauté until the radicchio is just wilted. Mix with balsamic vinegar, and thyme. Add salt and pepper to taste.
- Top toasts with radicchio mixture and serve warm
