Ingredients
- 1 tbsp red pepper jelly
- 1 tsp white wine vinegar
- 2 tbsp olive oil
- 1 tsp dijon mustard
- pinch salt
- 1 slice bacon cooked and crumbled
- 2 tbsp extra old cheddar cheese finely cubbed
- 3 cups baby spinach stemmed and torn
Instructions
- In a glass jar or bowl, whisk the red pepper jelly, vinegar, olive oil, mustard and salt. Heat in the microwave for 15-20 seconds. Whisk again and allow to cool.
- Remove the stems from the baby spinach, tear and put into a salad bowl. Spoon over the dressing a litlle at a time and toss. Being careful not to over dress.
- Sprinke with bacon bits and grated cheddar to finish.
