Lemon Curd
A fast, easy and tasty lemon curd recipe. Yielding a sweet, velvety smooth lemon curd. Sometimes simple is just better.
Ingredients
- 1 extra large egg
- 1 tbsp lemon zest
- juice of 1 fresh lemon
- ⅔ cup sugar
- 2 tbsp butter
Instructions
- In a medium saucepan over low heat, whisk egg with the juice of 1 lemon.
- Stirring constantly, add sugar, butter and lemon zest.
- When sauce starts to thicken, remove from heat and allow to cool. When it reaches room temperature, refrigerate. Use within 1 week.
