A fast, easy and tasty lemon curd recipe. Yielding a sweet, velvety smooth lemon curd. Sometimes simple is just better.

Ingredients
  

  • 1 extra large egg
  • 1 tbsp lemon zest
  • juice of 1 fresh lemon
  • cup sugar
  • 2 tbsp butter

Instructions
 

  • In a medium saucepan over low heat, whisk egg with the juice of 1 lemon.
  • Stirring constantly, add sugar, butter and lemon zest.
  • When sauce starts to thicken, remove from heat and allow to cool. When it reaches room temperature, refrigerate. 
    Use within 1 week.
