Delectable biscuits that have the sharp tangy flavour of gorgonzola cheese and earthy notes of walnut. Combining the walnuts with the gorgonzola cheese rounds out those flavours nicely. Also, the sharp flavours of gorgonzola come across with a subtle taste sensation. Served warm with butter, they are delicious on there own or added to a meal.
Keeping your wet ingredients cold is a good idea. Cold butter is easier to grate or cut in. It will also remain in small chunks while mixing. This will allow those small pockets of buttery goodness to melt while cooking and help with rising.
Biscuits with Gorgonzola and Walnuts
Biscuits with the sharp flavour of gorgonzola.
Ingredients
- 1 cup flour all purpose
- 1½ tsp baking powder
- ½ tsp salt
- 2 tbsp cold butter
- ¼ cup gorgonzola or bleu cheese crumbled
- ¼ cup walnuts chopped
- 2 tsp dried parsley
- ½ cup milk
- 1 egg beaten
Instructions
- Line a cookie sheet with parchment paper or coat with no-stick cooking spray.
- With the oven rack in the centre position, preheat to 375℉
- Mix the dry ingredients well. Using a whisk combine the flour, baking powder and salt.
- Cut in the cold butter, using a knife or pastry cutter, Small bits of butter should be visible. Add the cheese, nuts and parsley. Add the milk and stir only to combine, don’t over mix.
- Turn the dough out on a floured surface and divide in half. Knead each piece 3 times and form into ¾ inch discs. Cut each disc into 8 wedges, and brush tops with egg. Place on a baking sheet approximately 1″ apart.
- Bake for 15 – 18 minutes or until they are just beginning to turn golden.
